How to Make Cannabis Chocolate: Tempering, Dosing, and Even Distribution

Chocolate is the natural upgrade from brownies. A brownie pan gives you nine hand-cut squares that never quite match, while a chocolate mold gives you 24 identical cavities, and identical cavities are the closest a home kitchen gets to true per-piece dose control. Chocolate also hides cannabis flavor better than almost anything else you can cook with. Cocoa, sugar, and fat cover the grassy edge of infused oil so thoroughly that a 10mg piece tastes like dessert first and cannabis a distant second.

The tradeoff is that chocolate is fussier than batter. It seizes if a drop of water gets in, scorches if you rush the melt, and grows gray streaks if you store it badly. None of that is hard to avoid, but chocolate gives you little room to fix mistakes mid-pour, so learn the rules before the first bag of chips hits the double boiler.

Two routes: infused fat or distillate

Route one is infused fat. You melt cannabutter or infused coconut oil into your chocolate. It is the cheapest option and uses what you probably already make. The limit is texture: chocolate sets because cocoa butter crystallizes, and every gram of foreign fat interferes with that. Keep added fat to no more than about 1 part fat to 4 parts chocolate by weight, or the pieces will stay soft and smear at room temperature. Coconut oil behaves better than butter here because it carries no water; butter always holds a little moisture, the one thing melted chocolate cannot tolerate.

Route two is distillate, an already-activated concentrate you stir straight into the melted chocolate. There is no decarb step, no added fat, and no texture penalty, and the flavor is close to neutral. The downsides are cost and measurement; thick distillate is less forgiving than a measured spoon of oil. If you want a professional snap and shine, distillate wins. If you are working from your own flower, infused oil is the honest, affordable route.

Heat: the real enemy is scorching, not THC loss

New chocolate makers worry about cooking off potency. Don't. THC degrades meaningfully above roughly 320°F, and nothing in chocolate work comes anywhere near it. Your oil was activated during decarb (run your numbers through the decarb calculator if you are starting from flower), and the chocolate itself would be ruined long before the cannabinoids were.

The real enemy is scorched chocolate. Melt it gently over a double boiler or in short microwave bursts, and keep the whole mass under 120°F. Once melted, dark chocolate wants to be worked at 88-90°F. It feels narrow the first time and routine by the third batch.

Tempering, or how to cheat honestly

Tempering is what gives a chocolate bar its snap and gloss. The seed method is the practical home version: melt two-thirds of your chopped chocolate to about 115°F, pull it off the heat, stir in the reserved third until the mass cools into the low 80s, then bring it back to 88-90°F and hold it there while you work. Add your infused oil or distillate at this stage and stir well.

If that sounds like more thermometer work than you signed up for, cheat. Candy melts are engineered to set without tempering. Or use regular chocolate untempered, pour into silicone molds, and keep the finished pieces in the fridge. They will lack snap and eventually streak, but they will taste fine and dose exactly the same. There is no shame in the shortcut.

Even distribution: why piece 1 must equal piece 24

Inconsistent distribution is the number one reason homemade chocolates dose unevenly. Infused oil does not stay put in melted chocolate on its own; it drifts as the batch sits, so the first cavity you pour and the twentieth can end up meaningfully different.

Two habits fix it. First, stir thoroughly before every single pour, not just once at the start. Second, work by weight: weigh the finished chocolate mass, divide by the number of cavities, and pour each cavity to that weight on a scale. Slower than freehand pouring, and worth it. The dosing math, worked out

Say you made coconut oil from 4 grams of 20% THC flower, decarbed in the oven at 240°F for 40 minutes (90% efficiency), infused into 1 cup of oil:

(4 × 20 ÷ 100 × 1000 × 0.90) = 720mg THC in the full cup.

One cup is 48 teaspoons, so the oil carries 15mg per teaspoon. Measure out 16 teaspoons (1/3 cup, or 240mg) and melt it into 12 ounces of dark chocolate, which keeps the fat ratio safely under 1:4. Pour into a 24-cavity mold:

240mg ÷ 24 cavities = 10mg per piece.

Storage

Chocolate wants cool, dark, and dry, ideally 60-70°F. The fridge is riskier than it sounds: unwrapped chocolate picks up condensation and blooms, those harmless but ugly gray streaks. If you must refrigerate, wrap pieces tightly or use an airtight container, and let them come to room temperature before unwrapping. Label everything clearly, keep it locked away from kids and pets, and remember these are for adults 21 and over only. Few batches survive long enough for shelf life to matter anyway, at least not around second breakfast.

FAQ

Can I just melt chocolate chips and stir in distillate?

Yes, and it is the easiest version of this whole project. Chips contain stabilizers that make them melt thick and resist proper tempering, so skip the temper entirely: melt gently below 120°F, stir the distillate in thoroughly, pour into silicone molds, and store the pieces in the fridge. You lose the snap of a tempered bar but keep perfect dosing.

Why did my chocolate turn grainy when I added infused butter?

That is seizing, and the culprit is water. Butter is roughly 15-18% water, and even that small amount can make melted chocolate clump into a dull paste. Use infused coconut oil instead, since it is water-free, keep every utensil bone dry, and stay under the 1 part fat to 4 parts chocolate ratio.

Do I need to decarb before making cannabis chocolate?

If you are starting from flower, yes. Chocolate work happens between 88°F and 120°F, far too cool to activate THCA. Decarb the flower first (240°F for 40 minutes in the oven is the standard, at about 90% efficiency), infuse it into oil, then add the oil to your chocolate. Distillate is the exception, because it is sold already activated.

How strong should my first batch be?

Aim for 5mg per piece or less; pouring cavities half full gets you 2.5mg. Eat one piece and wait 2 hours before redosing. Chocolate is easy to nibble without thinking, which is exactly why every batch should be labeled with its per-piece dose before it goes in the pantry.

How long does cannabis chocolate keep?

Months, stored airtight somewhere cool and dark. THC degrades slowly at room temperature, and chocolate's fat protects it well. The bigger risks are bloom from temperature swings and someone mistaking your 10mg pieces for ordinary candy, so wrap them well, label them clearly, and keep them away from anyone under 21.
