Two things are worth reading off that table. First, the gap between "activated" and "destroyed" is not large — the decarb sweet spot sits only about 60°F below the degradation zone. Second, time matters as much as temperature: THC held at 240°F for three hours degrades meaningfully even though 240°F is "safe" for the standard 40-minute decarb.
Why baking at 350°F doesn't ruin your brownies
The most common worry — "my recipe bakes at 350°F, isn't that way past the limit?" — has a reassuring answer: water. While a brownie or cookie still contains moisture, its interior temperature hovers near 212°F, the boiling point of water, no matter what the oven dial says. The infused butter inside never sees 350°F.
The exceptions are where the water runs out. Thin cookies baked until crisp, edges of an overbaked pan, anything left in until visibly dry — those regions climb toward oven temperature, and potency losses follow. Practical rules: pull baked goods at the early end of the doneness window, favor recipes with some density and moisture, and never spread infused oil on something going under a broiler.
