  8. Let them set at room temperature, unmold, and cure uncovered for 24–48 hours.

Curing and coating without the weep

The cure is not optional polish — it's shelf life. Leave the unmolded gummies uncovered on parchment or a rack for 24 to 48 hours at room temperature. The surface dries into a thin skin, the chew deepens, and the reduced surface moisture is what keeps them from sticking together and sweating inside a container three days later.

Coating is where cured gummies go to die. The classic sugar-and-citric-acid sour coating is hygroscopic: the citric acid pulls moisture out of the gummy and the air, dissolves the sugar around it, and within a day or two your sparkling coat is a weepy syrup pooling in the container.
